Why do planes fly over unnecessary countries, not just in a straight line?
Like from Minneapolis to London Heathrow flew over Canada and down through Scotland to London.
And from Helsinki to Beijing went up towards the North of Russia before coming south to Beijing.
I thought it was to stay over as much land as possible for navigation or emergencies, but then why did they do it in the second example?

Unless there is a political reason to avoid flying over certain areas -- like a war -- airlines fly the most direct route. What looks like the long way on a flat map is usually the more direct route on the globe -- what they call the "great circle route". You can prove this to yourself with a length of string and a globe. Stretch the string from Minneapolis to London going over Canada and Scotland. Now take the same length and stretch it going directly west to east. You will see that flying the shortest route over the globe (going way north) is a lot less distance (and time and fuel) than doing what feels logical, which is flying due east.

Why can I hear airplanes roaring above sometimes and then not really hear them at all other times.?
I just moved like 7 minutes from Minneapolis/St.Paul Airport and the night before last and tonight I cant sleep b/c the planes are so loud, but last night I didnt hear them at all really. Why is this? I dont get it at all and no one can seem to give me an answer. HELP! haha

You mentioned high frequency being most likely being heard. You're on the right track but it's not HIGH frequency. High frequency is small wavelength, therefore high pitch. You just got it mixed up. You hear LOW frequency, therefore longer wavelength, which is deeper bass sound (as you said, you just got the frequency part wrong).
The reason you hear low frequency is because, high frequency (smaller wavelength), bends more in a medium (like air, water). High frequency will bend up towards the colder air.
As for hearing it one night and not another night, it's because planes take different runways for takeoffs and landing due to wind direction. Pilots always take headwind to gain more lift around airports. You'll get used to it. I lived very close to an international airport for five years and after awhile I really didn't notice.
Maybe purchase some ear plugs. They have really soft ones that don't apply too much pressure in your ears.
