is there some kind of ratchet that can be used on a recumbent trike so that 1 pedal can flip back?

im doing a project for my mechanical engineering project, and it's to redesign this recumbent trike for paraplegics where they use electrode stimulation to allow their leg muscles to move so they can get exercise. as the design stands, it is quite awkward for them to get their legs into the pedals as one leg is further away than the other. i thought that their may be some type of ratchet system that would allow the far away pedal to flip back 180 degrees, this way both pedals would be as close as possible hence making the operation a lot easier. any suggestions would be much appreciated!

Where can I buy a bike helmet for a toddler in Metro Manila, Philippines?
