Ultralight, trike or 3 axis control?
I would like to learn to fly ultralight aircraft but, which one is safer? in which one should I learn to fly and why?

Both are equally safe as long as they are well maintained. The pilot is most likely the more dangerous part in both.
Trikes have a particular handling in crosswind situations during take-off and landing and are more sensitive to turbulence but just as safe, just different. 3-axis machines seem to be a bit harder to learn on but appear to give a more defensive feeling against the elements when flying.
I have been flying both for about 30+ years, don't be deceived by the appearance, both can and will bite you if you are not careful and both are as safe as you will be yourself.
At airfields there are always "experienced" pilots around who had a lot of crashes and engine failures and other mishaps and hence know it all...choose to stay away from those, this is more important than the choice of type of ultralight to start with.
